Christmas is a time where we enjoy those little extra indulgences, we give ourselves a pass just for these few wonderful sweet filled days. I know I always want to try a little bit of everything offered at all gatherings I attend, however it's not always humanly possible! So why not offer some treats wrapped to go? Your guest will appreciate it the next morning as they enjoy these sweet little parcels with their morning  coffee or as a treat throughout the day.

To make these little wonderful parcels I use my favorite Banana Cake recipe. 

What you’ll need: 

Three ripe bananas 
1/2 cup raw honey  
3/4 cup light brown sugar  
2 large eggs at room temperature  
1/2 cup sour cream  
1 teaspoon vanilla bean paste  
1/2 cup Vegetable oil
2 cups whole wheat flour  
1 teaspoon baking soda 
1/2 teaspoon sea salt  
Use a loaf cake pan 
Thin red ribbon or red bakers twine- Approx. 20” per parcel  


Pre-heat oven  to 350. Grease and flour pan.       

Mix bananas, honey, sugar and eggs together with an electric mixer on medium speed until blended about 2 minutes, then add in sour cream, vanilla paste and oil until all combined.  

In another bowl combine flour, baking soda and salt. Sift these ingredients into the wet ingredients while mixer is on low speed and mix until it’s just combined. Do not over mix. 

Pour into greased pan filling 3/4 full. Bake for 30-35.  Check for doneness by inserting a toothpick in center of cake, if toothpick comes out clean cake is done.  


Wrapping Parcels : 

Cool cake completely  

Cut cake into 1.5 inch thick slices and either use the full slice or cut it in half for smaller parcels as desired 

Cut Parchment paper to fit around each cake and wrap as you would a small package. No need to use tape as you will secure each parcel with twine or ribbon. 

Cut 20” piece of bakers twine or red ribbon and loop around cake a tie with a pretty bow.    

Decorate top of parcels with a small sprig of red currants.
